Can Comfort Food Be Healthy?

I’m a big sucker for comfort food . Seriously, can you think of anyone who isn’t? I think even the strictest food natzi would admit to enjoying a meal of tasty meatloaf, fries and a dab of mac and cheese. Since I love cooking, one of my hobbies is transforming the foods I love into healthier choices. The three dishes below are my spin on “All American” classics.  I guarantee that if you take a stab at the 3 easy recipes below and add a green salad you’ll have a knock out tasty healthy meal that provides all the comfort of their less healthy versions.
 
Mega 3 Meat Loaf
 
This Meat Loaf not only tastes great, but it’s packed with those healthy omega 3 fatty acids from the grass fed ground beef.
Saute' the bacon, green pepper and onion then combine ingredients in mixing bowl then form in greased glass loaf pan and bake 50-60 minutes in a 425 oven.
 
1 lb ground grass fed beef
1 Free Range Organic Egg
1 cup finely diced green pepper
1/2 cup finely diced red onion
2 slices (chopped) nitrate free natural bacon
12 oz can diced organic tomatoes drained
¼ C Grated Parmesan Cheese
1/2 -1 tsp (if you like spicy) tsp red chile flakes


Sweet Potato Fries
 
Wash and peel and thinly slice sweet potatoes. Spread out evenly on a greased (olive oil) cookie sheet. Drizzle slices with olive all and then sprinkle with Celtic sea salt. Roast in 450 deg oven for about 30 min. or until desired crispiness.
 
2 Sweet Potatoes (Organic if you can find them)
Olive Oil
Celtic Sea Salt
 
Faux Mac and Cheese (use cauliflower instead of mac)
 
Break cauliflower up into small florets. Spread out evenly on greased (olive oil) cookie sheet, drizzle with olive oil and sprinkle with a little Celtic Sea Salt. Roast cauliflower until brown in a 425 oven for about 30 minutes. Melt butter in saucepan over low heat, add milk then gradually add about ¾ or the grated cheddar cheese (reserve ¼ for top) and stir until thickened. Remove sauce from heat and fold into roasted cauliflower also fold in parmesan cheese. Add mixture to greased casserole dish, sprinkle top with the remainder of the raw cheddar cheese and then bake for 40 min in a 350 oven until brown on top.
 
1 head Cauliflower (organic if possible)
Olive oil
Celtic Sea Salt
½ C Real Milk
3 Tbsp Grass Fed Org Butter
½  C parmesan cheese
8 oz package Amish Raw cheddar cheese (grated)
